Seguramente habr\u00e1s o\u00eddo a hablar de \u00e9l como el malo de la pel\u00edcula. Si bien es cierto que en determinados contextos es necesario evitarlo, hay otras situaciones en las que no est\u00e1 demostrado que as\u00ed sea.<\/p>\n<p style=\"text-align: justify;\"><span style=\"color: #ff99cc;\"><strong>El gluten es una prote\u00edna que se encuentra en la semilla de algunos cereales como el trigo, cebada, centeno, triticale, kamut, espelta y algunas variedades de avena<\/strong><\/span>. Adem\u00e1s, debido a sus propiedades fisicoqu\u00edmicas, tambi\u00e9n podemos encontrarlo a\u00f1adido de manera artificial en otros productos alimentarios como los c\u00e1rnicos.<\/p>\n<p style=\"text-align: justify;\">En ciertos contextos, como cuando existe un diagn\u00f3stico de enfermedad cel\u00edaca, alergia o sensibilidad al gluten\u00a0habr\u00eda que seguir una dieta sin gluten. De esta manera, se consigue una recuperaci\u00f3n de la pared intestinal que estaba da\u00f1ada y se normaliza la absorci\u00f3n de nutrientes. Como consecuencia, los s\u00edntomas se ven disminuidos y la respuesta del sistema inmunitario est\u00e1 m\u00e1s controlada.<\/p>\n<p style=\"text-align: justify;\">Por otra parte, en casos que exista \u00fanicamente un <a href=\"https:\/\/www.daodeficiencyinstitute.com\/es\/pacientes\/deficit-de-dao\/que-es-la-enzima-dao\/#whatsdaodeficiency\" target=\"_blank\" rel=\"noopener\">d\u00e9ficit de la actividad Diamino Oxidasa (DAO)<\/a> y se siga una <a href=\"https:\/\/www.daodeficiencyinstitute.com\/es\/pacientes\/deficit-de-dao\/alimentos-que-interfieren-con-la-histamina\/\" target=\"_blank\" rel=\"noopener\">alimentaci\u00f3n baja en histamina<\/a> no existe evidencia que haya que evitar el gluten. As\u00ed pues, de manera general, todos los cereales y tub\u00e9rculos ser\u00edan seguros.<\/p>\n<p style=\"text-align: justify;\">Sin embargo, conocemos que <span style=\"color: #ff99cc;\"><strong>el deterioro de la funci\u00f3n de la mucosa gastrointestinal por determinadas enfermedades y\/o medicamentos tambi\u00e9n puede reducir la actividad de la DAO<\/strong><\/span>. Por este motivo, cabe destacar que es com\u00fan que personas cel\u00edacas o que presenten sensibilidad al gluten no cel\u00edaca muestren alguna afectaci\u00f3n relacionada con la absorci\u00f3n de nutrientes en la mucosa intestinal, como es el d\u00e9ficit de DAO. Concretamente, en el caso de la sensibilidad al gluten no cel\u00edaca, los s\u00edntomas gastrointestinales y extraintestinales parecen estar muy relacionados con los que se encuentran en la intolerancia a la histamina. Por este motivo, en dichas situaciones s\u00ed que se deber\u00eda seguir una alimentaci\u00f3n baja en histamina y, adem\u00e1s, exenta de gluten.
